Main Ingredients:

1-1½ cups cooked rice

1 link Lap cheong (Chinese sausage) or other meat of your choice

½ cup cubed firm tofu

1 egg, lightly beaten

½ cup frozen mixed vegetables

Chopped cilantro

2-3 cloves garlic, chopped

2-3 tbsp Thai red curry paste

1 tbsp oil

Cooking Preparation of the Recipe:

In a non-stick pan on medium-high heat, add Chinese sausage and fry till just crispy. Add garlic and curry paste. Fry for 10 seconds. Add tofu, keeping everything moving. Toss in rice and vegetables. Fry for another 10 seconds, then pour beaten egg over rice. Stir well. Remove from heat, and stir through cilantro. Serve warm, garnished with a sprig of cilantro.
